Codex Standards for Vanilla, Coriander, and Large Cardamom

The 8th Session of the Codex Committee on Spices and Culinary Herbs (CCSCH8) concluded successfully in Guwahati, marking a major step forward in global spice standard-setting efforts.

Three New Spice Standards Finalized

A key highlight of the session was the finalization of three new Codex standards for:

  • Large Cardamom
  • Vanilla
  • Coriander

These standards have been recommended for adoption by the Codex Alimentarius Commission, the international food standards body established by the FAO and WHO to ensure food safety and fair trade practices.

Vanilla: The Orchid Spice

  • Botanical Family: Orchidaceae (Orchid family)
  • Nature: Hermaphrodite – possessing both male (anther) and female (stigma) organs.
  • Source: Derived from the dried and cured fruit pods (beans) of green-stemmed climbing perennials of the Vanilla species.
  • Etymology: The name Vanilla originates from the Spanish word vainilla, a diminutive of vaina meaning “sheath” or “pod.”
  • Growth: Grows as a vine that climbs shrubs and trees in tropical forests; typically requires 3–4 years to flower, with flowering occurring once a year thereafter.
  • Pollination: Flavor develops in the brownish-red to black seed pods through self-pollination.

Origin and Cultivation

  • Native Region: Central and South America.
  • Historical Cultivation: First cultivated by the Totonacs, an indigenous people of central-east Mexico, as early as the 15th century.
  • In India: Vanilla cultivation is primarily concentrated in the southern states of Karnataka, Kerala, and Tamil Nadu, with Karnataka accounting for the largest area under cultivation.

Significance of CCSCH8

The successful conclusion of CCSCH8 underscores India’s growing leadership role in international spice standardization. By facilitating globally accepted quality benchmarks, these new standards are expected to enhance the credibility and export potential of Indian spices in international markets.
